Man könnte sogar so weit gehen und ihn die Königin unter den grünen Tees nennen. Bereits vor der Ernte verhält sich der Matcha sehr divenhaft. Um sich vor Sonnenlicht zu schützen, lässt er sich mit Planen beschatten. Nur unter diesen Wohlfühlbedingungen ist es ihm möglich die atemberaubend hohe Menge an Chlorophyll zu produzieren, um seine charakteristisch grüne Farbe und gesundheitsfördernde Wirkung zu erzielen. Aus diesem Grund lässt er auch keine Maschinen an sich ran, sondern vertraut nur auf die handverlesene Auswahl. Um seine Fermentation zu stoppen und damit zu verhindern, zu einem gewöhnlichen Schwarztee zu werden, lässt er sich direkt nach dem Pflücken in einem Wasserbad erhitzen und im Anschluss trocknen, zerschneiden und sortieren.
